Good Eats 'n Sweet Treats

For those of you that are looking for new recipes, you've come to the right place. Rebecca and I will be posting at least one new recipe each week including step by step instructions and pictures of at least the finished product.

We will also be including cooking tips and fun facts about your favorite foods.

Feel free to ask any questions about the recipes or post your own comments if you've given them a try for yourself. Please keep it as only that though. There will be another thread started for everyone to post they're own recipes and pictures if they'd like.

We're hoping this goes over well and everyone enjoys it. Happy cooking!!

Strawberry Pretzel Dessert

AKA Crack Dessert.....

Jauhn's rating: 9 out of 10. He said "It's kind of weird to have something crunchy in with jello but it's still delicious."

The reason why this has been dubbed 'crack' dessert is because it can truly be addicting. It's also perfect for that female that craves sweet and salty at the same time (perfect for you guys to make as a surprise for your S.O.)

Ingredients:
  • 1 1/2 cups crushed pretzels
  • 4 1/2 tablespoons powdered sugar
  • 3/4 cup butter, melted
  • 1 cup white sugar
  • 2 (8 ounce) packages cream cheese
  • 1 (8 ounce) container cool whip thawed
  • 1 (6 ounce) package strawberry flavored jello
  • 2 cups boiling water
  • 1 (16 ounce) package frozen strawberries
Directions:

1. Preheat oven to 350 degrees. Mix together the pretzels, 4 1/2 tablespoons powdered sugar and melted butter. Press into the bottom of a 9x13 inch pan. Bake for 10 minutes, or lightly toasted. Set aside to cool completely (very important to let it cool completely or the rest will not set right).



2. In a medium bowl, beat the sugar and cream cheese until smooth. Fold in whipped topping. Spread evenly over the cooled crust. Refrigerate until set, about 30 minutes.

3. In a medium bowl, stir together the jello mix and boiling water. Mix in frozen strawberries, and stir until thawed. Let jello mixture start to thicken up (similar to the consistency of egg whites). This process shouldn't take too long because of the frozen strawberries but you may have to put in the refrigerated to speed up the process. Pour over cream cheese mixture in pan. Refrigerate until completely chilled, at least 1 hour.

Looks awesome. In the last few weeks I've made quite a bit of goodies with friends.

Peanut Balls (Covered in chocolate of course)
Peanut Clusters
Mini Cheesecakes with cherries

If I make any of it again, I'll try to take some pics - it is all really easy.

Today was a massive holiday goodies making day with my mom so I took some pictures (final products only) and am going to post the recipes as soon as I can get the images and everything together!

Candy Cane Cookies

1/2 c. butter, softened
1/2 c. shortening
1 c. sugar
1/4 c. powdered sugar
1/2 c. milk
1 egg
1 tsp. peppermint extract
1 tsp. vanilla extract
3 1/2 c. flour
1/4 tsp. salt
Green and red food coloring

1. Cream butter, shortening, sugar, and powdered sugar.
2. Beat in milk, egg, peppermint extract, and vanilla extract.
3. Gradually add the flour and salt.
4. Set aside 1/3 of the dough.
5. Divide the remaining 2/3 of the dough into 2 bowls.
6. Add green food coloring to one portion and red food coloring to the other portion.
7. Refrigerate doughs for 1 hour or until easy to handle.
8. Roll 1/2 tsp. of each color into a 3-inch rope. Place a green, red, and white rope together and twist into a candy cane shape.
9. Place 2 inches apart on ungreased baking sheet.
10. Bake at 350 for 11-13 minutes.

Chocolate Truffles

3 c. semi-sweet chocolate chips
1 (14 oz.) can Eagle Brand Original or Creamy Chocolate Sweetened Milk
1 tbsp. vanilla extract
Coatings: finely chopped toasted nuts, coconut, sprinkles, cocoa powder, powdered sugar

1. In a large saucepan, melt chocolate chips with sweetened milk.
2. Remove from heat.
3. Stir in vanilla extract.
4. Pour into a medium-sized bowl.
5. Cover and chill 2-3 hours, until firm.
6. Shape into 1 inch balls.
7. Roll in desired coating or decorate with frosting and candies.
8. Store tightly covered in the refrigerator.

(Sorry, I did not take a picture of this one....forgot to before we put them away. I'll try to get one later.)

No Bake Cookies

1 stick butter
1/2 c. milk
1/2 tsp. salt
1/2 c. sugar
3 c. oatmeal
1/2 c. peanut butter
1 tsp. vanilla extract
1/2 c. cocoa

1. Boil butter, sugar, milk, salt, and cocoa for 1 minute.
2. Remove from heat.
3. Add peanut butter, oats, and vanilla extract; mix well.
4. Drop with a spoon the desired size onto wax paper.
5. Let sit for 1 hour.

Chocolate Peanut Clusters

1 lb. almond bark
1 (12 oz.) package chocolate chips
1 lb. peanuts
1/2 c. peanut butter

1. Melt almond bark, chocolate chips, and peanut butter over low heat.
2. Remove from heat.
3. Stir in peanuts.
4. Drop onto wax paper.
5. Let sit for 1 hour.

Chocolate Chip Cookies

1 c. butter, softened

3/4 c. brown sugar
2 eggs
1 tsp. vanilla extract
1 tsp. salt
1 tsp. baking soda
3 c. flour
1 (12 oz.) package chocolate chips

1. Cream butter, sugar, and brown sugar.
2. Beat in eggs and vanilla extract.
3. Gradually add flour, salt, and baking soda.
4. Stir in chocolate chips.
5. Place 1 inch apart on greased cookie sheet.
6. Bake at 375 for 7-10 minutes.

*For the Christmas season, we used red and green colored chocolate chips instead.*

S'mores Bars

8-10 graham crackers
1 package fudge brownie mix (for a 9x13 pan)
2 c. miniature marshmallows
1 c. semi-sweet chocolate chips
2/3 c. chopped peanuts

1. Arrange graham crackers in a single layer in greased 9x13 bakin pan.
2. Prepare brownie batter according to directions.
3. Spread over graham grackers.
4. Bake at 350 for 25-30 minutes.
5. Sprinkle with marshmallows, chocolate chips, and peanuts.
6. Bake 5 more minutes, oruntil marshmallows are slightly puffed and golden brown.
7. Cool, then cut.

Pecan Pie Bars

1 1/2 c. flour
1/2 c. butter
5-6 tbsp. ice water
1/2 c. butter
1 1/2 c. brown sugar
3/4 c. light corn syrup
2 tsp. vanilla extract
5 eggs, beaten
2 c. pecans

1. Cut butter into flour.
2. Mix in ice water.
3. Place batter into a thin layer in a 10x15 pan.
4. Refrigerate while mixing filling.
5. Mix butter, brown sugar, light corn syrup, vanilla extract, and eggs until smooth.
6. Stir in pecans.
7. Pour over batter into the 10x15 pan.
8. Bake at 350 for 45 minutes.

9-Inch Apple Pie

2 (9-inch) pie crusts
3/4 c. sugar
1/3 c. flour
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
Dash of salt
6 c. tart apples, thinly sliced (approximately 6 medium apples)
2 tbsp. butter

1. Line the bottom of the pie plate with one crust.
2. Slice apples into large bowl.
3. Add sugar, flour, nutmeg, cinnamon, and salt to apples; mix.
4. Pour apple mixture into pie plate.
5. Dot with butter.
6. Cover with top crust with slits cut in.
7. Seal the edges of the 2 crusts together.
8. Cover edges with aluminum foil or pie crust guard.
9. Bake until crust is brown and juice bubbles through slits (40-50 minutes).
10. Remove foil or guard for the last 15 minutes of baking.

Ham and Cheese Quiche

I feel bad that I've been slacking on this thread. So here's some new stuff


I had looked up a recipe off of allrecipes.com just to get an idea of how many eggs to use mostly. But I added my own extras. Quiche is an extremely easy breakfast/brunch dish and you can use just about anything in it.

Ingredients:

4 Eggs
2 tbsps. Flour
2 tbsps. Milk
1 9" pie crust (you can make your own or buy frozen from the store. I used store bought)

My extras:
1/4 chopped yellow onion
1/4 chopped green bell pepper
chopped left over ham
shredded cheese
dried parsley, thyme, salt, and pepper

Directions:

Preheat oven to 350 degrees.

In a large bowl, beat eggs, flour, milk, and seasonings. Add all the chopped extras. Pour mixture in pie crust.

Bake until lightly brown on top and firm in the middle approx 40 minutes.

Enjoy!!

Spaghetti Salad

This recipe takes me way back. A friend's mom used to make this for us when I was in high school. I've been thinking about it lately so I looked it up on allrecipes.com to see if they had something similar just to get an idea how to make it. It's super easy for either a stand alone lunch or a side for dinner. You can always add whatever you want to it but this is what I did.

Ingredients:

Thin spaghetti noodles
Your favorite Italian dressing
Italian seasoning
Salt and Pepper
1 tomato
1/2 green bell pepper
1/4 yellow onion
Shredded cheese (I used the pre shredded Mexican cheese but parm would be good too)
Pepperoni

Directions:

Boil spaghetti noodles till soft. Drain and run under cold water. Add to large bowl.

Chop tomato, bell pepper, onion, & pepperoni. Add to noodles.

Pour in dressing, add seasonings, and mix to your desired tastes.

**I'm really bad with measuring the proper amount of pasta. I just sort of eyeball it and usually end up with waaay more than needed. This salad does make good left overs but you may need to add a lil more dressing to it in case the noodles absorb it all.

Serve cold. Enjoy!

Mexican Pizza

I'm a big Taco bell fan and love their mexican pizza. I found this recipe on allrecipes.com and thought I'd give it a try. I did adapt things to our liking. Here's my version.

Ingredients:

1lbs ground beef
1 16oz can of refried beans (I used jalepeno flavored for some extra flavor)
1 package taco seasoning
2/3 Cup water
4 10" flour tortillas
Shredded cheese
Taco sauce
Sour Cream
Green Chilies

Directions:

Pre heat oven to 425 degrees

Brown hamburger. Drain fat if needed. Add refried beans, water and taco seasoning. Mix till beans are warm. Set aside.

Lightly spray 2 tortillas with some cooking spray. Place on cookie sheet and bake until lightly crispy. (You may have to flip the tortillas to get both sides crispy).

Spread meat/bean mixture on one tortilla. Sprinkle some cheese on top.

Cover with other tortilla. Spread taco sauce over top tortilla. Sprinkle more cheese on top of taco sauce.

Bake until cheese is completely melted. Cut into quarters and top with sour cream and green chilies. (You can add any toppings you want re: olives, green onions, jalepenos, tomatoes, etc.)

Repeat with the other two tortillas.

The only thing I would change is probably only use 1/2 the packet of taco seasoning. It seemed a bit salty to me but Jauhn loved it. Also, this is very filling. I could only eat half of it.

Puppy Chow

This is a really quick and easy sweet snack to make. It does make quite a bit but it keeps well if you put it in an air tight container.

Ingredients:

9 cups rice chex cereal
1/2 cup peanut butter
1 cup chocolate chips
1 1/2 cups powdered sugar

Directions:

Melt peanut butter and chocolate chips on low heat until smooth.

Once melted, in large bowl mix cereal and chocolate/pb mixture until cereal is well coated.

Pour powdered sugar and cereal mixture in large plastic bag. Shake until cereal is coated with sugar.

Enjoy!
