Dinner suggestion

So I'll be cooking dinner for the ex and her roommate Friday, and I'm trying to think of something a little unique but still cheap and relatively easy to make. I'd like to keep it chicken based to keep cost down and stay kinda healthy. Pasta is nice but rather boring. Fresh veggies are a huge plus. I know we all love peppers, cooked onions, etc.

We're still very good friends and may get back together. Neither of us wants to be with anyone else. It's a long and complicated thing I don't feel like typing out for the whole forum to be honest.

my parents just had a bbq and made some pulled chicken from chicken legs with this bbq sauce that was sweet and had just enough kick to it and man it was good. mom said it was simple to make as well.

Ok here's the menu so far.

Baked barbecue chicken with shredded cheese and tomatoes
Green Beans
Mashed Sweet Potatoes

I've never eaten sweet potatoes, but I love their paler cousin so I'm hoping it goes well.

sweet potatoes are teh shit, just prepare tehm like normal potatoes

sooo good.

Do a Mediterranean blend salad. Use Paul Newman's "Newman's Own" dressing.. go ranch.. it is the SHIT!!! Maybe some flavored croutons if you so desire.
